Mango Banana Bread-  "Onolicious!"   

4 Cups All Purpose Flour               4 Teaspoons Baking Soda

1 Tablespoon Salt                           1 Teaspoon Cinnamon

1/4 Teaspoon Cloves                      1/4 Teaspoon Nutmeg

1 1/2 Cups Sugar                            5 Large Eggs

1 Cup Applesauce                           2 Teaspoons Vanilla Extract

1/4 Cup Chopped Walnuts              2 Cups Mashed Banana

2 Cups Diced Mango- only the best will do!

   Preheat oven to 350 degrees F.  Line two 8 1/2" X 4 1/2" loaf pans with waxed paper to cover sides and bottom.  Combine in large bowl, flour, baking soda, salt and spices.  In another bowl, combine sugar, eggs, applesauce, and vanilla.  Mix well.  Fold in walnuts, bananas and mango.  Add wet ingredients to dry until well blended.  Pour into loaf pans and bake for approximately 1 hour.  Remove from oven and cool on wire rack before slicing.

Banana-Macadamia Nut Scones

3 Cups All Purpose Flour                                         1/4 Cup Yogurt

1/2 Cup Brown Sugar, Packed                                 1 Teaspoon Vanilla Extract

2 Teaspoons Baking Powder                                    2 Large Eggs

1/2 Teaspoon Salt                                                     1 Cup Mashed Bananas

1/4 Teaspoon Baking Soda                                       1 Tablespoon Brown Sugar

3 Tablespoons Chilled Butter                                   1/3 Cup Chopped Mac Nuts

   Preheat oven to 400 degrees F.  Lightly spoon flour into dry measuring cup, and level with a knife.  Combine the flour, brown sugar, baking powder, salt and soda in a bowl.  Cut in the butter with a pastry blender until the mixture resembles coarse meal; set aside.  In another bowl combine yogurt, vanilla, eggs and banana until well blended.  Add this to the flour mixture, stirring just until moist (dough will be wet and sticky- DO NOT OVER BLEND).  Turn dough onto a lightly floured surface and knead lightly with floured hands four times shaping dough into a 9" circle.  Place dough on baking sheet coated with cooking spray.  Sprinkle the macnuts and 1 tablespoon brown sugar over the dough, pressing gently.  Cut dough into 12 wedges, cutting into but not through dough.  Bake for 20 minutes or until golden brown.  These are best served warm!



Joan's Island Chip Cookies -

"Bet you can't eat just one!"

1 1/2 Cups Butter, Softened                          1 1/4 Cups Sugar

1 1/4 Cups Brown Sugar, Packed                 1 Tablespoon Vanilla Extract

2 Eggs                                                       2 Cups Whole Wheat Flour

2 Cups All Purpose Flour                           1 Cup Oatmeal (the real "stuff")

2 Teaspoons Baking Soda                           1 Teaspoon Salt

2 Cups Semi-Sweet Chocolate Chips           2 Cups White Chocolate Chips

1 Cup Macadamia Nuts, Chopped              1 Cup Shredded Coconut

    Preheat oven to 350 degrees F.  Mix butter, sugars, vanilla and eggs in large bowl.  Stir in flours, oatmeal, baking soda and salt.  Stir in chips, nuts and coconut.  Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet.  Bake 10-12 minutes or until light brown.  Yields 6 dozen cookie.
